St. Patrick’s Day Cupcakes and Cake Pops
Yes, the greenest holiday of the year was almost a month ago but better late than never, right? While it’s difficult to remember all the greatness of St. Patrick’s Day (darn you delicious Guinness & Whiskey), I do remember the desserts were a huge hit! The hardest part was decided what to make- cupcakes? Cake pops? Ice Cream? So I just decided to make all three! And of course most of them were themed with the holidays most popular adult beverage:
First let’s talk about the Cake Pops, which on this special occasion have been renamed to Fake Pops! On the always wonderful, Pinterest, I came across the genius idea to use donut hole for Cake Pops! So instead of spending all my time putting together the Cake Pops, which is a tedious process, I could focus on decorating! And these little pots of gold turned out adorable!
The second dessert was of course, cupcakes! These are repeat cupcakes because two years ago I made them for a birthday dash and they were a HUGH hit! Ready for your mouth to start watering? The flavor of the St Patrick’s Day cupcakes were Chocolate Guinness filled with Irish Whiskey Ganche and topped with Baileys Butter Cream frosting. Take a moment to compose yourself. Not only did these cupcakes make an appearance at our party, but I baked up a bunch of mini cupcakes for work. At first I didn’t think it was very work appropriate to bring in ‘alcohol’ cupcakes, but everyone loved them!
And the last dessert was the best was sadly I didn’t get a picture of it- Chocolate Guinness Ice Cream! After talking about getting an ice cream machine for several months, I finally broke down and got one! And the best way to break it in was with a little Irish inspired ice cream. Actually, the idea came from my boyfriend, Jason- and I’ll admit it was a great idea!
Needless to say our St. Patrick’s Day celebration was a huge success! Can’t wait for next year!
